Beach House Burgers
Ingredients:
1 pound ground sirloin
1 pound ground chuck
1/2 cup chopped onion
1 1/2 cups chopped fresh tomatoes
2 Tablespoons chopped fresh basil
8 slices plain or smoked mozzarella cheese
Kosher salt and freshly ground black pepper
8 hamburger buns
Directions:
Put the ground sirloin and chuck, onion and salt and pepper to taste in a large bowl and mix togeather with your hands. Form into 3/4 inch thick patties.
Mix the chopped tomatoes and basil together in a medium bowl until well combined. Set aside.
Prepare a gas or charcoal grill. When the fire is medium hot and the coals are covered with a light coating of ash and glow deep red, grill the burgers, 3 to 4 minutes per side for medium rare. In the last minute of grilling place a slice of cheese over each burgere and cook until the cheese is just melted.
Serve the burgers on the hamburger buns and top each burger with a large spoonful of the tomoto mixture.
